高度3万フィートのワインのお味は?
What does wine taste like at 30000 feet?

皆様が飛行機をご利用される際に楽しみにされていることはどんなことでしょうか？

お忙しい毎日から束の間、開放されてご覧になる機内映画でしょうか。それとも空の上でのお買い物でしょうか、窓からご覧になる壮大な景色でしょうか。皆様それぞれの時間の過ごし方をお持ちでいらっしゃると思いますが、機内でのお食事を楽しみになさっておられるお客様はたくさんおられるのではないでしょうか？

高度３万フィートで召し上がりいただくお食事には格別なものがありますがそのお食事をさらに引き立ててくれるのが御一緒にお召し上がりいただくお酒です。

機内ではビール、ウイスキー、ワイン、日本酒、ウォッカ、ジンなどたくさんのお酒をご用意しておりますが、特に最近ワインをお楽しみになるお客様が多いように感じます。

私共は新人訓練の時にリカーサービスという授業があり、ワインも含めお酒に関する一般の勉強をしておりますが、先日お客様にもっとお食事とお酒を楽しんでいただきたいと言う強い思いから、現在ご用意させていただいている機内食と機内のワインとのマリアージュ（相性）についての勉強会がJALウェイズの空飛ぶソムリエ有資格者を講師の下開催されました。

 当日はシャンパン、白ワイン４種類、赤ワイン４種類が用意され、それぞれの銘柄の産地や使用される葡萄の品種、その銘柄が一番美味しくお飲みいただける温度、タイミング、またそれぞれの銘柄にまつわる逸話などが紹介されました。
例えば当日用意された銘柄の一つであるpiper-heidseckというシャンパンは、１７８５年フロレス・ルイ・エドシックにより創業されあのマリーアントワネットやマリリンモンローに愛されたシャンパンであるというようなお話です。また様々な食事に相性のよい銘柄について、同じ白ワインのなかでも例えばフランスのブルゴーニュのものがお勧めですなどというようなアドバイスを受け実際にテイスティングを行い自分自身の舌でも確かめ、味わいの印象をメモにとりました。

また当日の催しでは、機内でもっとお客様にワインをお楽しみいただくにはどのようにしたら良いかという積極的に質問も飛び交い大変有意義な勉強会となりました。

お客様と私共との出会いは一期一会と言われておりますが、だからこそ限られた時間、空間の中お客様のご要望に沿えるよう、楽しんでいただけるようにこれからも日々、努力して参りたいと思います。

What would you like to do on a long-haul flight? 

Some people will watch movies feeling freed from work for the first time in a long while.  Some will enjoy shopping duty-free items, and others will enjoy view from airplane windows.  Everyone seems to have his or her own ways to spend a good time.  I think there are many people who are looking forward to having in-flight meals. 

To complement the meals at 30000 feet, JALways offers a wide range of alcoholic beverages such as beer, whisky, wine, Japanese sake, vodka and gin.  These days increasing number of passengers order wine with their meals. 

All flight attendants of JALways have to undergo extensive initial training courses after they join the company.  During the training period, trainees have lessons about liquor service, through which they acquire basic knowledge of wine and other alcoholic beverages. 

Recently a wine appreciation workshop was held by JALways cabin crewmembers who were also sommelier to teach crewmembers what in-flight wine would go well with our meals.  I joined the course to enrich my wine knowledge, aiming at giving our passengers right advice and making them feel happier with their meals and drinks.

    
At the workshop, Piper-Heidsieck, a famous bland of champagne, and four kinds of white and red in-flight wines were prepared for the participants.  We learned about producing areas and the grape varieties of each wine, and the best temperature and timing to serve them.  We also heard interesting stories related to the wines.  For example, the house of Piper-Heidsieck was founded by Florens-Louis Heidsieck in 1785, and its champagne has been loved by loyal families and Hollywood celebrities including Marie-Antoinette and Marilyn Monroe.  After hearing the advice from instructors what wine would pair well with the entrée that JALways offered, participants tasted all the wines and recorded their impressions.  At the discussion session, participants and instructors actively exchanged their views on how to make our passengers feel more satisfied with our selection of wines.  The workshop was fulfilling and valuable for me.

Every meeting with our passengers is once-in-lifetime experience　and our time for serving is limited, but that's the very reason why we put our best efforts in making our passengers feel more comfortable with their flights.  We continue to do our best to provide quality service that meet the unique expectations of each passenger.
